Amplified fragment length polymorphism (AFLP) was used to analyze the genetic diversity of 14 strains of Xanthomonas arboricola pv. pruni and seven strains of X. axonopodis pv. phaseoli, which are used in xanthan production studies. Relationships identified by the AFLP profiles were assessed for xanthan production capacity, geographical location and host plant. Strains were isolated from 10 different geographic regions in South and Southeast States in Brazil. Data were analyzed for genetic similarity using the Dice coefficient and subjected to UPGMA cluster analysis. This study reports results on the biochemical characteristics of 274 Staphylococcus aureus strains isolated from mastitic milk, hands of milkmen and milking machines. Features included colony morphology on Baird Parker agar (BPA), catalase, coagulase and thermonuclease tests. API-Staph (bioMérieux, France) was used as reference identification system. 39.4% of the colonies on BPA identified as S.aureus were atypical. They were more frequent in milk samples (94.4%). All S.aureus strains were coagulase positive but intensity of the test varied according to the source: environmental strains were 3+ or 4+, while 17.1% of strains isolated from milk presented only 1+ or 2+ results. Listeria monocytogenes is a bacterium capable to adhere to the surfaces of equipment and utensils and subsequently form biofilms. It can to persist in the food processing environmental for extended periods of time being able to contaminate the final product. The aim of this study was to trace the contamination route of L. monocytogenes on a fresh mixed sausage processing line, from raw material to the final product. The isolates obtained were characterized by serotyping and molecular typing by pulsed-field gel electrophoresis (PFGE) using the restriction enzymes ApaI and AscI. Os objetivos deste estudo foram detectar, por PCR, genes codificadores de enterotoxinas estafilocócicas, pertencentes ao cluster egc (genes seg, sei, selm, seln e selo) em Staphylococcus aureus isolados em diferentes alimentos de origem animal, e relacionar sua presença com a fonte de isolamento. Sixty-five strains of coagulase positive staphylococci (Staphylococcus aureus, S. intermedius and S. hyicus) were identified at species level by PCR amplification of the coa gene, specific for S. aureus, and of the nuc gene, specific for S. intermedius and for S. hyicus.

O experimento foi conduzido, visando detectar Pseudomonas spp, em leite proveniente de propriedades leiteiras, de acordo com o sistema de produção. A presença de Pseudomonas spp, em leite cru recém - obtido e leite cru refrigerado (5 a 8°C), foi relacionada com as diversas etapas de ordenha em quatro propriedades leiteiras com diferentes sistemas de manejo higiênico. A contagem média de Pseudomonas spp, nas diversas fontes, nas propriedades, variou de 2,48 X 10²UFC mL-1 (superfície de tetos) a 1,97X10(4)UFC mL-1 (equipamentos), quando a higiene praticada foi adequada, mas de 8,71 X 10²UFC mL-1 (superfície de tetos) a 1,6X10(5)UFC mL-1 (leite refrigerado), quando o manejo foi inadequado.
